
The final spice blend for our first recipe is added right at the end. The vivid yellow probably gives this one away but there is an extra spice in there called asafetida. Not generally seen in mainstream food stores but a common spice in Indian cuisine.
Asafetida has a strong aroma which dissipates during cooking and provides depth to dishes with a flavor similar to onions and garlic. The spice is therefore important for strict Jains who do not eat root vegetables. Just a small pinch gives fish dishes, grilled meats and most vegetables a great taste!
