This is such a delicious and nutritious addition to a summer meal and can be thrown together with a lot of ingredients you'd find in your cupboard! That being said the big handfuls of fresh parsley and mint truly make this dish incredible.
100g pearl barley
Big handful of mixed nuts
Big handful of dried fruit- we used mango, apricots, raisins
2 garlic cloves
Big handful of fresh parsley and mint
1/2 a lemon zested and juiced
5 tbsp olive oil
1/2 tsp of cumin
Salt and pepper
Wash the pearl barley and cover with water. Bring to a boil and simmer for 30 minutes.
Cook the couscous according to instructions
Meanwhile, roughly chop the mixed nuts, dried fruit, parsley and mint.
Finely chop the garlic cloves and zest half the lemon
Add all the ingredients to a large bowl and mix in the olive oil, lemon juice, cumin and salt and pepper
Break up the feta and sprinkle over
